A Spanish Cuisine in Bangkok, Albricias, located on the 4th floor of Chatrium Residence Sathorn, is known for its achievement of becoming the first Spanish venue in Thailand to win the esteemed Restaurantes de España Award in 2022. This award is a prestigious recognition of Spanish culinary excellence presented by Spain's Ambassador to Thailand.
Albricias is embarking on a new chapter with the appointment of David Aparicio as its Executive Chef. With over 22 years of experience in Mediterranean cuisine and training under the renowned Chef Martin Berasategui, Chef Aparicio is introducing a new menu that perfectly balances traditional Spanish cuisine with innovative fusion flavours. This menu is a testament to the restaurant's unwavering commitment to culinary evolution and creativity, promising a unique and delightful dining experience.
Chef Aparicio's menu consists of delectable and delightful dishes. For starters, the Iberic Fish dish includes smoked hamachi, spicy mentaiko tartar toast, and wasabi foam. Another option, El Bocado de Joselito, features Joselito Jamón and pan de cristal am tomàquet. There's also the Ensaladilla de Txangurro, which consists of crab salad, chilli pickle, and avocado mousse. For those with a crab allergy, the restaurant can provide an alternative with the Warayaki Salmon, featuring salmon warayaki style on top of potato salad. It is presented as sushi-like.
Padrón Unos Pican y Otros No is fried Spanish padron peppers. These peppers are typically mild, with a unique and delicious flavour. They are fried in olive oil and sprinkled with sea salt, creating a tasty and addictive dish.
In the Pica Pica section on the menu, diners can savour Croquettas Selection, presenting three delightful handcrafted croquettas, each bursting with distinct flavours. Guests can indulge in the rich, savoury jamon croquette, savour the unique taste of the squid ink croquette, and delight in the flavorful red prawn croquettas.
One of the noteworthy dishes in the Pica Pica section is Nuestra Bravas. This dish features layers of thinly sliced potatoes, known as potato millefeuille, topped with a flavorful chipotle sauce and ali-oli, a creamy garlic sauce. It's a compelling combination of textures and flavours, making it a standout dish on the menu.
The main course, Iberico Albahaca Fettuccine, is a delightful dish with a Papada pork roll, carefully crafted homemade fettuccine, a rich Iberico basil cream sauce, and Parmesan cheese tuile. This savoury combination promises to deliver a unique and satisfying flavour experience.
Seafood Fideuà is an excellent dish for sharing. This traditional Spanish dish is similar to Paella, but instead of using rice, it is made with spaghetti. The spaghetti is cooked in a rich seafood broth with a variety of fresh seafood such as red prawn, hotate, and squid, creating a flavorful and satisfying meal for a group to enjoy.
For dessert, the Creamy Cocoa, Cinnamon and Orange is a delectable treat consisting of layers of rich, creamy cocoa and almond dacquoise, complemented by aromatic cinnamon and luscious white chocolate cream. It is served with a side of homemade orange ice cream, creating a perfect harmony of flavours and textures.
The culinary experience at Albricias is a delightful journey of savoury and inventive Spanish dishes crafted by the talented Chef Aparicio, ensuring a warm welcome for guests and patrons alike.
