Chef Sawek pays meticulous attention to detail, ensuring that every ball of sushi rice is prepared at the optimal temperature. Only the finest ingredients, including salmon, tuna, sea urchins, and fish liver - all handpicked and imported from Japan, are expertly combined with Asian, European, and Thai flavours. The result is an unforgettable omakase experience that promises a delightful fusion of flavours and textures.

This river-view omakase restaurant offers a wide range of selections, from 9 to 17 courses, with dishes that may vary depending on the season and the catch.

One of the highlight courses is Awabi, or Abalone, which consists of a sauce made from abalone liver, teriyaki, soy sauce, and peanut oil. The chef steams the abalone with sake for hours until it's soft, juicy, and aromatic. Then, it's thinly sliced and topped with the sauce, which complements the abalone.

Whether it's Madai or Hamachi Nigiri, their sushi rice is prepared with akasu vinegar, a premium red vinegar. This lends the sushi rice its colour and provides a pleasant acidity, rich aroma, and roundness. It complements the mildly sweet taste of Madai or Hamachi's buttery, slightly sweet flavour. The nigiri is then topped with Chef Sawek's special jelly sauce, adding some texture and a fresh citrus note, and freshly grated pink salt for some mineral taste.
